Achari Bengan
Brinjal made with pickled spices has a very different but very delicious taste, it tastes best with pooris and paranthas.
Let's start making Achari Brinjal.
Ingredients for Achari Baingan
Brinjal - 500 grams (8-10 brinjals without seeds)
Cumin seeds - 1/2 teaspoon
Asafoetida - 2 pinch
Black Mustard seeds - 1/2 teaspoon
Fenugreek seeds - 1/4 teaspoon
Turmeric powder - 1/2 teaspoon
Coriander powder - 1 teaspoon
Anise powder - 1 teaspoon
Red chilly powder - 1/4 - 1/2 teaspoon
Ginger - 1 inch piece, grated
Green chillies - 2 chopped
Mixed spices - 1/4 teaspoon
Dried mango powder - according to your taste
Salt - according to your taste (1 teaspoon)
Mustard oil - 2-4 tablespoon
Green coriander - 2-3 tablespoon
How to make Achari Bengan
Wash the brinjal and make it ready, remove its stalk, cut it into 1/2 inch width and 2 inch length pieces. If there's a lot of time to make to the sabzi then put the brinjal in water and keep it for sometime.
Heat the oil in the pan, when the oil heats add cumin seeds and asafoetida, then fenugreek seeds and black mustard seeds. After fenugreek seeds and black mustard seeds are fried, add ginger, green chillies, fry it a little. Then add turmeric powder, coriander powder and anise powder, fry it a little. Now put the pieces of brinjal, then add red chilly powder and salt and cook it for 2-3 minutes till the brinjal is coated with all the spicy.
Cover the container with lid and cook it for 2-3 more minutes in dim flame, then check it. Stir the sabzi properly and if the sabzi is dry then ass 1-2 tablespoon water, then cover it again and let it cook for 3-4 minutes. Remove the lid and stir it properly with a spoon, if the brinjal is not soft yet, then cover it again and cook for 2-3 minutes more. Then check the brinjal again if it has turned soft or not, if it is soft then add dried mango powder, mixed spices, and green coriander, stir it properly and mix it.
Achari Brinjal is ready now, take it out in a bowl and garnish it with the remaining coriander. You can serve it with pooris, paranthas and chapatti and enjoy it.
This much can serve upto 4-5 members.
Time taken - 25 minutes.
