Chole Bhature Recipe

छोले भटूरे (Chole Bhatoore) पंजाब की पसंददीदा डिश है. खाने में बहुत ही लाजबाव. अगर आप तेल की बनी चीजों से दूर नहीं रहते तो आपको ये बहुत पसंद आयेंगे. तो आइये आज हम छोले भटूरे (Chhole Bhature) बनायें.

आवश्यक सामग्री- भटूरे के लिये - Ingredients for Bhature

  • मैदा - 400 ग्राम (4 कप)
  • सूजी (रवा) - 50 - 60 ग्राम( आधा कप)
  • दही - 100 ग्राम ( आधा कप )
  • नमक - 3/4 छोटी चम्मच
  • चीनी - 1 छोटी चम्मच
  • बेकिंग सोडा - 1 छोटी चम्मच
  • तेल - तलने के लिये

मैदा और सूजी को किसी बर्तन में छान कर निकाल लीजिये, मैदा के बीच में जगह बनाइये, 2 टेबिल स्पून तेल, नमक, बेकिंग सोडा, दही और चीनी इसमें डालकर, इसी जगह इन सब चीजों को अच्छी तरह मिला लीजिये. गुनगुने पानी की सहायता से नरम आटा गूथ लीजिये.

गुथे हुये आटे को 2 घंटे के लिये बन्द अलमारी या किसी गरम जगह पर, ढक कर रख दीजिये.

कढ़ाई में तेल डाल कर गरम कीजिये.

गूथे हुये आटे से थोड़ा सा आटा एक नीबू के बराबर आटा निकालिये. लोई बनाइये और पूरी की तरह बेलिये, लेकिन यह, पूरी से थोड़ा सा मोटा बेला जाता है. ( यदि आप इसे हाथ से थपथपा कर बेल सकते हैं तो हाथ से थपथपा कर बना लें ). पूरी को गरम तेल में डालिये, कलछी से दबाकर फुलाइये, दोनों ओर पलट कर हल्का ब्राउन होने तक तलिये. एक प्लेट में पेपर नेपकिन बिछाइये, तले भटुरे निकाल कर प्लेट में रखिये. सारे भटूरे इसी तरह बनाकर तैयार कर लीजिये.

भटूरे तैयार हैं. छोले, अचार और हरे धनिये की चटनी के साथ गरमा गरम भटूरे परोसिये और खाइये.

आवश्यक सामग्री - छोले (chole) के लिये - Ingredients for chole

  • सफेद चना ( काबुली चना)  -  250 ग्राम (1 1/4 कप)
  • बेकिंग सोडा - आधा छोटी चम्मच
  • टी बैग - 2 टी बैग न हो तो 1 1/2 छोटी चम्मच चाय एक सफेद और साफ कपड़े में बाँध कर प्रयोग करें
  • टमाटर - 4 - 5 मीडियम साइज
  • हरी मिर्च - 2
  • अदरक - 1 इन्च लम्बा टुकड़ा य़ा एक छोटी चम्मच अदरक का पेस्ट
  • रिफाइन्ड तेल - 2 टेबिल स्पून
  • जीरा - आधा छोटी चम्मच
  • हींग - 1-2 पिंच
  • अनार दाना पाउडर - 1 छोटी चम्मच से थोड़ा अधिक
  • धनियाँ पाउडर -   डेड़ छोटी चम्मच
  • लाल मिर्च पाउडर - एक चौथाई छोटी चम्मच
  • गरम मसाला - एक चौथाई छोटी चम्मच
  • नमक - स्वादानुसार
  • हरा धनियाँ - आधा छोटी कटोरी ( बारीक कटा हुआ )

विधि - How to make Chole Bhature

चनों को रात भर पानी में भिगने रख दीजिये. पानी से निकाल कर चनों को धोकर, कुकर में डालिये, एक छोटा गिलास पानी, नमक और बेकिंग सोडा मिला दीजिये, और टी बैग भी डाल दीजिये. कुकर बन्द करें और गैस पर उबालने के लिये रख दीजिये. कुकर में सीटी आने के बाद गैस धीमी कर दीजिये, और 2-3 मिनिट तक पकने दीजियें, गैस बन्द कर दीजिये और प्रेसर खतम होने तक चनों को कुकर में ही पकने दीजिये. तब तक हम मसाला तैयार कर लेते हैं.

टमाटर, हरी मिर्च, अदरक को मिक्सी से बारीक पीस लें.

कढ़ाई में तेल डाल कर गरम करें. हींग, जीरा और अनारदाना डाल दीजिये, जीरा भुनने के बाद धनियाँ पाउडर डाल दीजिये. चमचे से चलायें, टमाटर, अदरक, हरी मिर्च का मिश्रण और लाल मिर्च पाउडर डाल कर मसाले को जब तक भूने तब तक कि मसाले के ऊपर तेल न तैरने लगे. भुने मसाले में एक गिलास पानी और स्वादानुसार नमक डाल दीजिये. एक उबाली आ जाने दीजिये.

कुकर खोलिये और टी बैग चने से निकाल कर फैंक दीजिये. चनों को इस मसाले की तरी में मिला कर अच्छी तरह चमचे से चला लीजिये. यदि आपको छोले अधिक गाढ़े लग रहे हो, तो आप उनमें आवश्यकता अनुसार पानी मिला लीजियें, उबाल आने के बाद 2-3 मिनिट पकने दीजिये. गैस बन्द कर दीजिये. गरम मसाला और आधा हरा धनियाँ मिला दीजिये. आपके छोले तैयार हैं.

छोलों को प्याले में निकाल लीजिये, हरा धनियां ऊपर से डाल कर सजाइये. गरमा गरम छोल भटुरे और चावल के साथ परोसिये और खाइये.

चार या पांच सदस्यों के लिये, समय -1 1/2 घंटा

    thnaks madhulika..though i didnt try it yet..but i have one confusion that why do we need tea bag for the chhole.i never heard of it. And in the absense of tea bag you suggested we should use white cloth filled with tea, but when we put the cooker on stove and let it whistle won't anything happen to the cloth.

      @nidhi shreya,teabag gives a nice dark brown colour to chhole.even if u try the cloth,nothing will happen to the cloth.hope this helps...

    I observed that u are not using onion and garlic in any of ur recipe.Rather these two vegges are widely used in all subjis and curries.How curry would test without onion ?

      I believe we have many othe roptions for making curries. onion, yes ofcourse it is my favourite veggie, still it is optional. same for garlic.

    Just a suggestion. Boil tea leaves in water & soak chick peas in them instead of plain water. I do this & the chick peas turn out perfect in color.

    madhulika ji ,i tried tea leaves tied in cloth anu put it in chole while boiling. but its taste get changed becoz of tea leaves water. what to do. suggest me.is that we are using the same water for pouring in the gravy for giving color . bit confused.

    शिप्रा, भटूरे फूलने के लिये सूजी की आवश्यकता नहीं है, गैस फ्लेम को कन्ट्रोल करना होत है, तेल अच्छी तरह गरम होना चाहिये,और करछी से दबा कर तले. यदि आप सूजी मिलाना चाहती है, तब आप 500 ग्राम मैदा में करीब 100 ग्राम सूजी मिला लीजिये.

    निशा जी छोले तो बनाने आते हैं, पर ये भटुरे नही बनाने आते, मैदे की पूरी बनती ही नही, सिकुड कर छोटी हो जाती है... मदद किजीये.. मैने दो-तीन बार देख लिया लेकिन मेरी पूरियाँ तो पूरी कम लिट्टी ज्यादा लगती हैं, हलाँकि आटे तो बन जाती हैं.. तो क्या आटे वाली से भटूरो का स्वाद आ जायेगा? कृपया मदद करिये

    गरिमा जी, भटूरे का आटा उपरोक्त विधि से लगाकर रखें, भटूरे बेलने के लिये आटे का परोथन या तेल की मदद लीजिये,आप अच्छी तरह बेल सकेगी.

    Today when I was searching recipe for Karonde ka achar and I found on your site. Then this Chole-bhature recipe. You have given a nice recipe and looks good too. I want to try it however I had tried to use anardana in past in choley and we could feel that dana between the teeth though i used it in powder. How to avoid it. Whcih anardana do you suggest to use.

    अल्पना, अनारदाना पाउडर जीरे के साथ ही भून लिया जाता है,दांत के नीचे महसूस होता है, लेकिन अच्छा लगता है, और अनारदाना छोले में डालना आवश्यक नहीं हैं, अगर आपको पसन्द नहीं आया तो मत डालिये.

    खुशबू, दही, चीनी और बेकिंग पाउडर आटे को फरमैन्ट करने के लिये डाला जाता हैं,इससे भटुरे मुलायम और स्पन्जी बनते हैं. ईस्ट और बेकिंग पाउडर दोनों ही फरमैन्टेसन के काम आते हैं.

    Nice receipe. But nishaji i had tried yesterday chole was execellent and delicious according to your method but bhature was little bit hard not soft to eat. Why it was ? I had prepared bhature aata according to your receipe after that it was hard ?

    निशा; ज्योति,भटूरे के कड़े होने के कारण, आपकी गैस फ्लेम तो नहीं. अगर आटा अच्छी तरह सही गूथा गया है तब भटूरे कड़क होने ही नहीं चाहिये.

    nishaji bhature klia fresh curd use krna chaiye ya sour curd.kya khatta dahi use krne pr bhatura khatta ho jata hai.kya aloo ko b use kia jata hai bhature me.ferment klia 2 hours sufficeint hai
    निशा: सुनीता, दही बहुत ज्यादा खट्टा न हो, भटूरे के आटे को 2 घंटे के लिये रख दीजिये काफी है. मैदा में उबले हुये आलू डाल कर भटूरे बनाये जाते हैं, बनाकर देखिये, इन भटूरे में तेल कुछ अधिक भर जाता है.

    यहा आपने एक चीज़ का ज़िक्र नही किया वह यह की भटूरे का निचला हिस्सा तलने के बाद उपरी हिस्सा तलने के लिए चम्‍मच से तेल डालते है इससे बीच का हिस्सा थोड़ा सा कच्चा रह जाता है , और इसी से भटूरे का अच्छा टेस्ट आता है

    me aapko bahut bahut thanks kerna chahugi pata hai kyu mene jab se aapki sight dekhi hai me alag alag tarah ki dish banane lag gai hu pehle muje jyada kuch nahi aata thaa magar ab to aapki sight dekh ker sab banati hu mene chole bhature bhi banaye sahi me bahut teste bane nisha ji mere paas microvave nahi hai magar muje cake bahut pasand hai me sochti thi ki bina microvave ke cake kaise banau magar aapki vajah se mene cake banaya cooker me sahi me vo bhi bahut testi bana me to aapki bahut badi fen ho gai hu nisha ji ab me aapse ak request kerna chahti hu vo ye ki mera baby 2 and half year ka hai uske liye koi recipie batiye na jo usko pasand aaye thanks

    hmaree bhature na toh fuulte hai or nahi soft hote hai or rakhne ke bad maida bahut gilli ho jati hai ab ham kya kare nisha ji
    निशा: वरुंदन जी भटूरे के लिये गूथी गई मैदा यदि पतली हो जाती है तो अगली बार मैदा थोड़ी सख्त गूथिये, तेल को पर्याप्त गरम (गरम तेल में जब थोड़ा सा आटा तोड़ कर डालें तो वह तुरन्त तैर कर आना चाहिये) करें तो आपके भटुरे अच्छे बनेंगे.

    nisha ji , cholae was a big hit, bhaturae was gud as well every one liked them but i was not very much happy because the dough was not that well and while making them it appeared as if im dealing with rubber. they smell perfect texture after frying perfect but a bit thick. it would be a great favour it you could tell how much water i should use in above mentoned ratio. as far as i think dough was not perfect might be a bit tight. please reply.

    aap ki resipe meane try ki thi.. chhole to bahut hi achhe bane the... magar bhature achhe nahi bane the... maine aata banate samay usme baking powder nahi daala tha kya isiliye bhature achhe nahi bane honge... meri help kijiye plz... jab mene bhature banaye to bahar nikal kar 5 min. rakhte hi vo pata nahi kese ban jate the ko koi use tod hi nahi sakta tha... agar todna chahe to vah laammabaaa ho jata tha... pls. nisha ji... mere resipe me garbad kaha ho gai... meri help kijiye...

    Thanx itni acchi recipe dene k liye..maine aaj doosri baar aapki recipe try ki n bhature is baar almost theek bane..but mere kuch bhature gol ful rahe..kuch poori tarah fool nahi paaye..mujhse kya galti hue hogi...aap please bataye...

    Nisha ji, please avoid using khana soda in ur reciepes . it is harmful for health.
    Overnight soaked chana easily be boiled so need to add soda into it

    mein jab bhee bhature baliti hu wo jayda bade nahi bante, puri kee tarhe chote se rehin jayate hai. mujhe hands se banane nahi atye. Jayada loi lane per woh beech mein se mote rahen jayate hai aur chakle per chipak jayate hai. pl. iske liya mujhe bahaten kee 10 bhature ke liya kitna maidya leaina chaine or usme kitna dahi add karna chaiya . Dahi se maidya gudhne per who hands per chipak jayata hai. water dalne ke need nahi lagti.

    Nisha Ji main aapki site ki regular reader hun..maine jo bhi khana banana sikha hai ache se vo sab aapki vajah se hai...maine aapke bataye hue tarike se chole-bhature banaye aur mere husband ko vo bahut hi jyada pasand aaye...iskiye maine sara credit aapko deti hun..aur i think meri jaisi bahut si ladies hongi jo aapki vajah se khana banane mein interest lene lagin hongi ya khana banana seekh gayi hongi..:) dubara se aapka bahut-2 dhanyavaad...hum logon ko pardes mein rahkar bhi ghar jaisa khana banana sikhane k liye...

    Thanks for your Chole Bhature Recipe. My wife wants to know that though you have mentioned GARAM MASALA as one of the ingredients for chhole but neither mentioned in the method nor illustrated by your video too. So,would you please clarify as to when or at which stage to use the garam masala?

    mam...first of all thanks to help in cooking...I'd tried ur recipe & made bhatura for the first time. It was tasty but ye khinch nahin rahe the jaise restaurant ke hote hain, it was more like poori..ye fool bhi gaye the par pata nahin kis mistake se inme wo quality nahin thi...Can't understand ...Do help me...once again thanks a lot.

    To roll bhatura, I only use a little oil & do not lift bhatura from chakla, in stead rotate chakla & keep on rolling. This way bhatura does not shrink in size.
