Shahi Paneer Recipe शाही पनीर


पनीर की  सभी प्रकार की सब्जियां, ज्यादातर लोग पसन्द करते हैं लेकिन शाही पनीर बहुत ही स्वादिष्ट सब्जी हैं, हर पार्टी की शान है, शाही पनीर सब्जी को आप अपने मेहमानों के लिये या अपने किसी स्पेशल दिन पर बनाइये. शाही पनीर सब्जी बनाने में बिलकुल आसान है.

शाही पनीर को पनीर के टुकड़े तल कर या बिना तले ही डाल कर दोंनो तरीके से बनाया जाता है. हम पनीर के टुकड़े तल कर शाही पनीर बनायेंगे. तो आइये हम शाही पनीर (Shahi Paneer Recipe) बनाना शुरू करते हैं.

आवश्यक सामग्री - Ingredients for Shahi Paneer

  • पनीर - 500 ग्राम (कटे हुये टुकड़े 3 कप)
  • टमाटर - 5 मिडियम आकार के
  • हरी मिर्च —  2
  • अदरक — 1 इंच लम्बा टुकड़ा
  • घी या तेल —2 टेबल स्पून
  • जीरा — आधा छोटी चम्मच
  • हल्दी पाउडर — एक चौथाई छोटी चम्मच
  • धनियां पाउडर - एक छोटी चम्मच
  • लाल मिर्च — एक चौथाई छोटी चम्मच से भी कम
  • काजू     - 25-30 (2 टेबल स्पून ऊपर तक भरे हुये)
  • मलाई या क्रीम— 100 ग्राम( आधा कप )
  • गरम मसाला — एक चौथाई छोटी चम्मच
  • नमक — स्वादानुसार ( 3/4 छोटी चम्मच )
  • हरा धनियां — 1 टेबल स्पून (बारीक कतरा हुआ)

विधि - How to Make Shahi Paneer

पनीर को चौकोर टुकड़ों में काट लीजिये. नान स्टिक कढ़ाई में 1 टेबल स्पून तेल डालिये और हल्का ब्राउन होने तक पनीर को तल कर निकाल लीजिये.

काजू को आधा घंटे पानी में भिगोइये और बारीक पीस कर प्याली में निकाल लीजिये.

टमाटर, अदरक और हरी मिर्च को मिक्सी से पीस कर पेस्ट बना लीजिये. पेस्ट को निकाल कर प्याले में रखिये. मलाई को भी मिक्सी में मथ लीजिये.

कढ़ाई में घी या मक्खन डाल कर गरम करिये.  गरम घी में जीरा डाल दीजिये.  जीरा ब्राउन होने पर हल्दी पाउडर और धनियां पाउडर डाल दीजिये, हल्का सा भूनिये और इस मसाले में टमाटर का पेस्ट डाल कर चमचे से चला चला कर भूनिये.  टमाटर भुनने के बाद, काजू का पेस्ट और मलाई डाल कर मसाले को चमचे से चला चला कर जब तक भूनें तब तक  मसाले पर तेल तैरता न दिखाई देने लगे. इस मसाले में आवश्यकतानुसार तरी को जितना गाढ़ा या पतला रखना चाहते हैं, पानी मिला दीजिये.  नमक और लाल मिर्च भी डाल कर मिला दीजिये.

तरी में उबाल आने पर पनीर के टुकड़े डाल कर मिला दीजिये और ढककर बिलकुल धीमी आग पर सब्जी को 3-4 मिनिट तक पकने दीजिये, ताकि पनीर के अन्दर सारे मसाले जज्ब हो जायें. शाही पनीर सब्जी तैयार है. गैस बन्द कर दीजिये. थोड़ा सा हरा धनियां बचा कर, हरा धनियां और गरम मसाला मिला दीजिये.

शाही पनीर की सब्जी को प्याले में निकालिये. हरे धनियां ऊपर से डालकर सजाइये. गरमा गरम शाही पनीर को चावल, नान.परांठे या गरमा गरम चपाती के साथ परोसिये और खाइये.

सुझाव:
अगर आप प्याज पसन्द करते हैं तब 1-2 प्याज और 4-5 लहसन की कली छीलिये और बारीक काट लीजिये, जीरा भूनने के बाद, कटी प्याज और लहसन डालिये और हल्की गुलाबी होने तक भून लीजिये, और अब सारी चीजें उपरोक्त क्रम से डाल कर शाही पनीर सब्जी बना लीजिये.

    शिप्रा, यदि आप सब्जी में प्याज डालना चाहती हैं, तो एक प्याज लेकर बारीक कतर लीजिये,जीरा भूनने के बाद घी में कतरी हुई प्याज डाल कर, हल्का गुलाबी होने तक भून लीजिये, इसके बाद उपरोक्त विधि से सब्जी बना लीजिये. आपके लिये मैं कढ़ाई पनीर की रैसिपी जल्दी ही लिखूगी.

    I checked all your recipes, and all look so good and easy to make .You have done great job. If possible add more mithai and ice-cream recipes please. And I was looking for Gatte ki subzi since such a long time but did not find anywhere else. Thanks for posting that.     अनु, आप सब्जी की तरी बनाने के लिये, काजू या खसखस प्रयोग में लाइये. 25-30 काजू आधा घंटे के लिये पानी में भिगो दीजिये, बारीक पीस लीजिये तथा मसाले के साथ भूनिये, अपनी इच्छा अनुसार जितना गाड़ी तरी रखनी हो पानी डाल कर तरी तैयार कर लीजिये. होटल से अच्छा टेस्ट होना चाहिये.

    nisha ji ur recipe was vry good but m thoda correctn karna chati hu...... mai jo shahi paneer bnati hu usmae haldi ka istemal nahi karti n kaku n magaj ko milk m paste bna kar usae karti hu.... n khoya dalne se issme colour bhot acha aa jata hai........

    निशा: रिंकी, दूध गरम करके, ठंडा होने के बाद, फ्रिज में रख दीजिये, दूध के ऊपर अपने आप ही मोटी मलाई जम कर तैयार हो जाती है, उसे चम्मच से उतारिये और अलग प्याले में रख लीजिये, घर की ताजा मलाइ तैयार है.

    paneer ko tale mat, talne se recipe ka taste paneer main nahi aayega, malai ka upyog kam karen, jitni jeada malai hogi, utna hi jeada recipe heavy hogi, sari recipe main oil hojaega.

      no dhai will make the taste sore for you. if cream is not aval then u can add fat malai floating on cooled boiled milk (after taking out of freeze).

    kya hum tomato k saath kaju k badle dahi use kar sakte. tomato + dahi k combination se sahi paneer jyada khatta to nhi ho jayega.

    I have tried Kadai paneer as well as cholle from cholle Bhature recipe and I really liked the taste. Thanks for giving so many recipes.

    I am going to try Sahi paneer very soon.
    I am good cook but I was not able to cook these kind of Dishes as our food is so simple like only vegetables and Dal. So I really thanks to share you skills here.

    निशा: स्मितल, पहले टमाटर के मसाले को इतना भूनना है कि मसाले तेल अलग होने लगे, मलाई को फैट कर डालें और अच्छी तरह फिर से चलाते हुये भूनें 2-3 मिनिट तक भूनें, ग्रेवी में पानी डालकर भी जब तक चलाते हुये तब तक पकाना है जब तक कि उसमें फिर से उबाल न आ जाय, नमक भी ग्रेवी में उबाल आने के बाद डालना है. अच्छी ग्रेवी बनती हैं.

    I was so happy to find your site. I first used it to make the garam masala. I was lucky to find subtitles to your video. When I looked up Shahi Paneer, I was estatic to see that your site had a recipe. I LOVE SHAHI PANEER! Unfortunately, this time there were no substitles. Anyway to post the recipes in English too? I tried to put it in Google translate, but some steps are lost in translation.

    as i think that shahi paneer has white or cream colour and for keeping white or cream colour, we dont use colouring spice or ingredients in the recipe.

    as per me, we use onion paste, poppy seed paste and cashewnut paste in the gravy....

    plesase tell me what is right?

    Nisha ji kya hum shahi paneer me Kaju paste k sath sath Amul fresh Cream bhi daal skte hain..agar haan to kya hum ise aise hi direct packet se nikal kr dalein ya fir ise fetne ki jrurat padegi? (agar fetne ki jarurat ho to uski bhi vidhi btaiye)

    Today I am going to try this recipe and tomorrow I will give you my feedback, I think It will be good as I saw in your video but in your video you are not showing the Mixing or Texturing about Malai/ Creme.
    Any Reason ???

    maine shahi paneer banaya par uski tari gahadi nahi hui. use jyada thick karne ke liye koi tarika bataye please.

    First of all thanks for such good reciepes.
    We have not used sauce/sugar etc here.What should be added to give it bit sweet taste as in restaurents.
    Also, I want to know the purpose of curd, milk and cream in curries...which can work as substitute for other ingredient?and which can not among these?
    निशा: सुमन, करी में मीठे स्वाद के लिये 1 -2 छोटी चम्मच चीनी डाली जा सकती है. ग्रेवी को दही या दूध या क्रीम या मलाई और ड्राईफ्रूट या मावा और बहुत सारी चीजों से बनाया जाता है, और सादा ग्रेवी टमाटर से या इसमें थोड़ा बेसन भून कर मिलाने से बन जाती है, टमाटर प्याज की सादा ग्रेवी बन जाती है, अपने स्वाद के अनुसार ग्रेवी को बनाया जा सकता है.
