Besan ke Gatte Recipe – बेसन के गट्टे


बेसन के गट्टे (Rajasthani Besan ke Gatte) की सब्जी राजस्थान की स्पेशल डिश है. स्पेशल तो है ही और खाने में भी बहुत स्वादिष्ट है. आप भले ही राजस्थान में रहते हों या राजस्थान से बाहर आपको ये सब्जी बहुत पसंद आयेगी. आइये आज खाने के साथ बेसन के गट्टे की सब्जी बनायें.

आवश्यक सामग्री - Ingredients for Rajasthani Besan ke Gatte

गट्टे बनाने के लिये  -

  • बेसन - 200 ग्राम ( 1.5 कप)
  • तेल - 1 टेबल स्पून
  • दही - 2 टेबल स्पून
  • खाना सोडा -  1- पिंच
  • नमक - स्वादानुसार (आधा छोटी चम्मच)

सब्जी की तरी बनाने के लिये

  • टमाटर - 3-4 (मीडियम आकार के)
  • हरी मिर्च - 2
  • अदरक - 1 इंच लम्बा टुकड़ा
  • ताजा दही - आधा कप
  • क्रीम या मलाई - 50 ग्राम (एक चौथाई कप)
  • तेल - 2 -3 टेबल स्पून
  • हींग - 1 पिंच
  • जीरा - आधी छोटी चम्मच
  • हल्दी पाउडर - एक चौथाई छोटी चम्मच
  • धानियाँ पाउडर - एक छोटी चम्मच
  • लाल मिर्च पाउडर - एक चौथाई छोटी चम्मच से कम
  • गरम मसाला  - एक चोथाई छोटी चम्मच से कम
  • नमक  - स्वादानुसार
  • हरा धनियाँ  - 2-3 टेबल स्पून (बारीक कटा हुआ)

विधि - How to make Besan ke Gatte Curry

बेसन को छान कर किसी बर्तन में निकालिये, तेल, नमक, दही और खाना सोडा डालकर मिलाइये, अगर पानी की आवश्यकता हो तो थोड़ा सा पानी डालकर नरम  परांठे बनाने के लिये जैसा आटा गूंथ लीजिये. गुंथे हुये आटे को 10 मिनिट के लिये ढककर रख दीजिये. अब इस बेसन के आटे से छोटी लोही तोड़िये उससे करीब आधा या पोना इंच व्यास और 3- 4 इंच लम्बी बेलनाकार आकृ्ति के रोल बना लीजिये. सारे बेसन के आटे से इसी तरह रोल बना लीजिये.

किसी बर्तन में करीब 5 कप पानी (इतना पानी जिसमें बेसन के रोल  उबाले जा सकें) डालिये और गैस पर उबालने रख दीजिये, जब पानी में तेज उबाल आ जाय तब बेसन के रोल उबलते पानी में डाल दीजिये और 15 मिनिट तक उबलने दीजिये इसके बाद गैस बन्द कर दीजिये. पानी से उन बेसन की गट्टों को कलछी की सहायता से निकाल कर एक प्लेट में रख दीजिये, बचा हुआ पानी सब्जी की तरी में काम आ जायेगा.

गट्टे ठंड़े होने के बाद उन्हैं आधा इंच के टुकड़ों में काट लीजिये.  बेसन के गट्टे सब्जी के लिये तैयार हैं.

टमाटर, हरी मिर्च और अदरक   बारीक पीस कर किसी प्याले में निकाल लीजिये. मिक्सर में दही और क्रीम डाल कर मिक्सी चला कर मिक्स कर दीजिये.

कढ़ाई में तेल डालिये, तेल गरम होने पर हींग और जीरा डाल दीजिये. जीरा ब्राउन हो जाय तब उसमें हल्दी पाउडर, धनियाँ पाउडर डाल दीजिये, इसके बाद इसमें पीसा हुआ टमाटर का मसाला डालिये और मसाले के ऊपर तेल तैरने तक भून लीजिये.  भुने मसाले में दही, मलाई और लाल मिर्च डालिये, मसाले को जब तक भूनिये तब तक वह दाने दार न दिखाई देने लगे, या मसाले से तेल अलग न होने लगे.

बेसन के  गट्टे उबालने के बाद से बचा पानी इसमे  डाल दीजिये. अगर तरी आपको गाढ़ी लगे तो आप उसमें आवश्यकतानुसार पानी डाल दीजिये. तरी में उबाल आने पर तैयार किये हुये गट्टे और स्वादानुसार नमक डाल दीजिये.  सब्जी में उबाल आने के बाद 2- 3 मिनिट तक उबलते रहने दीजिये. बेसन के गट्टे की सब्जी बन चुकी है गैस बन्द कर दीजिये और इसमें गरम मसाला डाल दीजिये.

राजस्थानी बेसन के गट्टे (Rajasthani Besan ke Gatte) की सब्जी तैयार है.  बेसन के गट्टे (Besan ke Gatte) की सब्जी को किसी प्याले में निकालिये और कटे हुये हरे धनिये से सजाइये.  गरमा गरम बेसन के गट्टे की सब्जी परांठे, नान, चपाती या चावल किसी के साथ परोसिये और खाइये.

अगर आप प्याज, लहसुन डाल कर सब्जी बनाना चाहते हैं, तो एक प्याज, 4-5 लहसुन की कली छील कर बारीक काट लीजिये और जीरा डालने के बाद डाल कर भून लीजिये, और सब्जी को उपरोक्त विधि से बना लीजिये.

सावधानिया:

  • 1. बेसन का आटा अधिक सख्त और अधिक पतला न लगायें, ये चपाती के आटे जैसा नरम होना चाहिये.
  • 2. आटे से बनी हुई डंडियां पानी में उबाल आने के बाद ही डालिये.
  • 3. गट्टे उबालते समय, पानी में फिर से उबाल आने के बाद गैस फ्लेम मीडियम या इतनी रखें कि पानी में उबाल हमेशा आता रहे.

    hum bhi ghar pe besan ke gatte ki jhol wali sabji khate hai.
    Mummy kabhi kabhi uski suckhi sabji bhi banati hai, jaise bhindi ki banate hai.

    Oor haa kabhi kabhi namkin chaval banate samay batle (matar), dhaniya oor gatte bhi add karke mummy bahut hi badhiya banati hai.

    गुथे हुये बेसन से बनाई गई डंडिया पकाने के लिये, उबलते पानी में ही डालें. गट्टे हार्ड नहीं होंगे.
    यह सब्जी चपाती और चावल दोनों के साथ पसन्द की जाती है.

    nishaji, jab main aata doondh rahi thi, to aata saara haath mein chipak gaya aur bartan mein bhi...
    bas kisi tarah gola hi bann paya, lekin normal aate ki tarah nahi

    Nisha ji,am very fond of gatte ki sabji,have tried it once but my gattes were very hard,i don't know what is the reason.One more thing i want to know is....is it necessary to use curd & cream while making gravy of gatte...plz tell me...bcoz after adding both these things ,colour of sabji turns in to yellow...please advice

    Meine bhi ye gatte ki recipe try ki hai. It ws yummy everybody liked it. Normally me cooking jyada nahi karti kyonki meri mother in law use to do it. but jab se aapki recipes padi hai tab se har saturday sunday kuch naya try karne ka man karta hai.     Maine gatte ki sabji banai lekin gatte tari men dalne par ghulne lagte hain. Phir jab maine gatee, masala ke saath tale aur bad me pani milaya to result bahut badhia aya.

    agar hum besan k gatty main thoda sa feeka mava(khoya), kuti hui soff 1 chota chmach, sabut dhaniya 1 chota chamach milayenge to test aur bhi badh jayega. aur hum gatto ko boil karke thoda sa fry kar le to aur testy ho jayega. agar aadha besan suji jesa mota leya jaye to gatty soft banty h.:)

    रेडिमेड गट्टे बाजार में मिलने लगे है पर पकाने पर अन्दर कच्चे रहते है, इसको कैसे पकाए की वो कच्चे न रहे

    Nisha ji, thank u for the great collection of simple homemade recipes. I'm a better cook today than I ever was.
    I had eaten a sabzi made from the skin of watermelons. It was at my mothers friends house. When I inquired abt the recipe she said its a Rajasthani speciality. Since u have such an amazing n exhaustive Rajasthani section may I request u to write this recipe.

    I think these kind of recipes are great because no part of the fruit will go wasted. I'll be grateful for ur input.

    hi nishaji, today i tried d recipe of gatte ki curry ... it turned out to be very tasty.... but only one problem was there that i made 2 rolls of besan. out of them one roll was very soft and was properly cooked but the other one had hardness inside. i boiled them as per ur instructions .. both were made from same dough and were of same size... then what was the mistake i made..will be waiting for ur reply..

    ma'am jin sabjiyon me malai aur dahi dono use hote h..wo fati si ho jati hain meri....jabki main namak 2-3 ubaal aane pe dalti hu....plz bataiye ki sbji kese pakayein iss tarah ki
    निशा; भावना जी, दही और मलाई को नार्मल तापमान पर ही सब्जी में डालिये और लगातार चलाते हुये तेज आग पर तब तक पकाते रहें जब तक कि उसमें फिर से उबाल न आ जायें, इसके बाद यदि पानी डालें तो भी लगातार चलाते हुये पकायें, अच्छी तरह उबाल आने पर नमक डालें, ये नहीं फटेंगे.
