After this, pour ¼ cup of water in the jar and stir it, all the pulses will come in it.  Put this also in the bowl.  Now mix the dal and rice mixture well.  Then add 1 tsp of salt and some water and mix it.  The batter should be neither too thin nor too thick.  In this way the batter for the dosa will be ready, cover it and keep it.

Process of making Aloo Masala

Put 1 tbsp of oil in a pan and heat it.  Add ¼ tsp of mustard seeds, ½ tsp of cumin seeds, ½ tsp of turmeric and 20-25 curry leaves and fry lightly in hot oil.  When roasted, add 1 finely chopped tomato, 1 tsp of grated ginger and 2 finely chopped green chilies.  After frying them a little, add some water to it, cover and cook them for 2 minutes.

When the time is up, mash the tomatoes.  Then break 4 boiled potatoes into it, add ¾ tsp of salt, 1 tsp of coriander powder, ½ tsp of red chilli powder and a little less than ¼ tsp of garam masala.  Now put 3-4 tbsp of water on medium flame and fry them while mashing them well.  Fry them for about 4-5 minutes and the potato masala will be ready.  Take them out and let them cool down.

Process of making Dosa

Add ¼ tsp of baking soda to the batter and mix it well.  Now put some oil on the tawa and spread it all around and heat it.  When the tawa is hot, pour some water on it and cool the tawa.  Turn off the flame and wipe the pan.  Then put the batter on the pan and spread it on the pan, making a round.  Now after lighting the flame, pour some oil on the corners and cook the dosa.  When brown lines start shining from the bottom of the dosa, then put potato masala on it, fold it and keep it in a plate.  Make all the dosas in the same way, the masala dosa will be ready.

Batter should be of perfect consistency.

If the batter looks thick while spreading on the pan, then you can add some water to it.

The tawa should be very cold while spreading the dosa.  For this, wipe the pan with water and turn off the flame or slow it down.  When the dosa is spread, then roast it by increasing the flame.
