Rakhiya Vadi । Urad dal Kumhra badi

Prepared from white Urad dal and white petha can be stored for a long time and used for over a year.
Ingredients for Urad dal Kumhra badi:
- Soaked Urad dal - 1 cup ( 200 gms)
- Kumhra - 500 gms
- Asafoetida - 1 pinch
- Ginger - 1 inch ( grated )
- Baking Soda - Less than 1/4 pinch
- Cumin seeds - 1/2 tsp
- Cloves - 4
- Black pepper - 1/2 tsp ( coarsely grounded)
- Cinnamon stick - 1 piece
- Whole coriander - 2 tsp
- Green chili - 2 ( finely chopped )
- Salt - 1/2 tsp ( or to taste)
How to make Rakhiya Vadi :
Take some urad dal, washed well and soaked in water for 2 to 3 hours.Remove water and grind the dal.
Make a pit in the dal, Add asafoetida, grated ginger, 1 tbsp water to it. Cover and keep it aside.
Take kumhra, remove the soft pulp and the seeds. Remove skin as well. Grate the kumhra pieces, then keep in a piece of cloth and tie it, keep in a plate. To squeeze of water keep something heavy over cloth so that the excess water is easily drained.
Whisk the dal, add baking soda and whisk again. Whisk it such, that when pick some out and put it in water, it floats over the water. Add the grated kumhra to dal and mix well. Cover and keep it over night,and make vadis in the morning.
Coarsely grinded spices such as, cumin seeds,cloves, black pepper,cinnamon stick, whole coriander. Add salt.
Stir the dal, add green chili finely chopped.Mix well, the miux is ready to make the vadis.
Grease the thalis and your hands with oil. Pinch out the dal and break vadis in the plate at some distance from each other. Keep the thalis out in sunlight,In 2 to 3 days of sunlight vadis will dry up.
Kumhra vadis are dry and ready.Keep in air tight container and use for over a year. Make it with potatoes, eggplant etc and have a delicious meal.
Suggestion:
- Instead of grated ginger you can use, 1 tsp ginger paste.
- After grating the kumhda, you can also chop the smaller pieces and use them.
- Add baking soda to the vadis make them soft.
- You can make the vadis with less of the spices or just with salt.
- Vadis take 3 days to dry up, but if you dry up vadis in sunlight for the first day, they turn out good.
- You can also make the vadis over the cloth.
- You can keep the size of the vadis as desired.
