How to prepare Tomato Chaat?
We will start with preparing sugar syrup. Add 2 tbsp of sugar and 1/2 cup of water to a cooking vessel. Boil the water till the sugar dissolves completely.
Once the sugar dissolves, add 1/4 tsp of roasted cumin powder and 1/4 tsp of black salt. Cook the syrup for a minute or two, and then keep it aside.
Take 4-tomatoes and chop them. Heat 1 tbsp of ghee in the pan. Add 1/2 tsp of cumin seeds to the ghee, turn the flame low, and roast slightly. Add 1 inch finely chopped ginger, 2-finely chopped chilies, and roast briefly.
Add chopped tomatoes to the pan and mix 1/2 tsp of turmeric powder, 1 tsp of coriander powder, and 1 tsp of red chili powder. Add 1/2 tsp of salt to the tomatoes and cook covered for 3-4 minutes over low-medium heat.
After 3 minutes, mash the tomatoes, add 1/2 cup of water, and cook for a few minutes. Take 3-boiled potatoes (crumbled) and add to the mashed tomatoes.
Add 1/2 tsp of black salt, 1/2 tsp of dry mango powder, 1/4 tsp of garam masala to the mixture, and mix everything well. Once tomatoes and potatoes are well mixed, add other spices.
Mix 1/2 tsp of roasted cumin powder, 1 tsp of chaat masala, 1-2 tbsp of chopped coriander leaves in the chaat. Add 1/2 lemon juice and turn off the heat.
To serve, take the aloo-tamatar chaat out in a bowl. Add desi ghee, 2-3 spoons of sugar syrup, chaat masala, cumin powder, namakpare (sev or namkeen), and coriander leaves to the chaat.
Tomato Chaat is ready to be served. Prepare this delicious banarasi tomatoes chaat and enjoy it with your family.
