Tomato Bhindi Sabzi - Okra With Tomato Recipe

We all love eating crispy okras. Instantly make okra with tomatoes, spices and little gravy and serve with chapattis and paranthas. Everyone will relish eating them for sure.

Ingredients for Tomato Bhindi Sabzi

  • Lady finger - 250 grams
  • Tomato - 2 (100 grams)
  • Green coriander - 2 to 3 tbsp (finely chopped)
  • Oil - 2 to 3 tbsp
  • Asafoetida - 1 pinch
  • Cumin seeds - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Ginger paste - 1/2 tsp (optional)
  • Green chilly - 2 (finely chopped)
  • Salt - 3/4 tsp or to taste
  • Red chilly powder - 1/4 tsp
  • Fennel powder - 1 tsp
  • Coriander powder - 1 tsp

How to make Okra and Tomatoes Recipe

Wash the okras twice thoroughly with water and place in sieve so that excess water drains out. Take one okra and remove stalk from both ends. Now cut the lady fingers in 1/2 to 0.75 small chunks. 

Wash the tomatoes as well and chop in small pieces. 

Heat some oil in a pan. When oil is hot, add cumin seeds, asafoetida, turmeric powder, coriander powder, ginger paste and green chilly. Saute the spices for a while. 

Add chopped tomatoes, okra, salt and red chilly powder in the masala and mix all the ingredients really well. Cover the sabzi and cook for 5 minutes on low flame and check later. 

Stir the sabzi and cook for 5 more minutes. Check later. If you see some juice or water in the sabzi then cook it on high flame for 1 to 2 minutes. Sabzi is now ready, add fennel powder and green coriander  as well. Turn off the flame and take out sabzi in a bowl. 

Garnish the okra tomato sabzi with some green coriander. Serve this tantalizing sabzi with chapatti, parantha or rice and relish eating.
