Fara or Pitha can be made as Namkeen or Sweet Pitha . Sweet Pitha is a type of sweet meat and is made with rice flour, milk and dry fruits.

Sweet Pitha is made during the occasion of Makar Sankranti or Kali Puja in Bengal, hot Sweet Pitha is also prepared and eaten a lot during winters in Bengal. Namkeen Pitha is known as Main Fara or Fara in Uttar Pradesh. You can make Namkeen Pitha for breakfast any day. It is very tasty, Fara is made from wheat flour, Suji, rice flour or wheat flour and Suji mixed together or all three mixed together. Very less oil/Ghee is used while preparing Namkeen Pitha. - Ingredients for Fara Recipe

  • Wheat flour -  1 cup
  • Suji(semolina) - 1/2 cup
  • Rice flour - 1/2 cup
  • Oil - 1 tbsp
  • Channa dal - 1 cup
  • Green chilies -   2
  • Ginger - 1 inch long piece
  • Salt - add to taste
  • Turmeric powder -  1/2 tsp
  • Coriander(dhaniya) powder - 1 tsp
  • Amchur -  1/2 tsp
  • Garam masala -  1/4 tsp (if you want)

- How to Make Fara

Soak Chana dal in water for 4 hours or the entire night, wash this soaked dal. Put dal in the mixer along with 2 green chillies(washed and stems removed), ginger(peeled,washed and grated) and make a little thick paste without adding any water.

Add salt, turmeric powder, coriander powder Amchur powder and garam masala to the dal paste. Mix all the ingredients well. Pitthi is ready for stuffing.
How to make Namkeen Fara or Goijha
Filter wheat flour, Suji, Rice flour and keep them in a bowl. Create a crater in the center, put oil and salt in it then mix well.

Knead a soft dough using warm water(use water almost half to the amount of flour). Cover the dough for 20 minutes. Shape Pitha into a Gujhiya or round Bati as you desire.

Break off pieces from the dough(shape the pieces into a small puri), Roll the dough pieces like a Peda. Take 1 piece and flatten it with a rolling pin into a circle 2 1/2 or 3 inches in diameter. Take 1 spoon of dal and place on the rolled puri, lift Puri from one side and fold it giving a moon shape(Gujhiya shape) and press its edges together. Now place it on a plate. Roll all the pieces in this same manner, stuff them shape them like Gujhiyas and keep them on the plate.

To make Pitha in the shape of round Bati, roll the piece or press with your hand to expand it 2 inches in diameter. Place 1 tsp dal Pitthi on it then wrap up the Puri and close from all sides.Gently press with tour hand to expand it in a round shape like a Kachori.

Take water(enough to submerge the Pithas easliy) in a utensil and heat, it would take around 2 litres of water to boil them.
Fara - Goijha - Pitha
After the water comes to boil put the Pitthas in water, when the water comes to boil again boil them for another 15 minutes. Turn the Pithas over from time to time and stir them from top to bottom. Keep Pithas in a strainer to drain out all the water.

Namkeen Pitha is ready, you can have them with chutney. You can fry them to make them more tasty.

To fry Pittha :

  • Oil - 2 tbsp
  • Jeera(cumin seeds) - 1/2 tsp
  • Curry leaves - 6 to 7 leaves
  • Ginger  -  1 inch long piece (finely chopped)
  • Green chilly - 1 to 2 (if you prefer spicy) finely chopped
  • Salt - 1/4 tsp
  • lemon - 1 small sized(squeeze the juice)
  • Green coriander - 1 tbsp (finely chopped)

Cut Pitha into 2 halves with a knife. Pour oil in a frying pan(kadhai) and heat., put Jeera in hot oil. After Jeera is roasted break the curry leaves and put them in oil followed by ginger, green chilly, boiled Pithas, salt and lemon juice. Fry them for 2-3 minutes as you turn their sides from time to time. Awesome Namkeen Pitha is ready.

Namkeen Pitha is prepared. Serve hot Namkeen Pitha with green chutney or sweet chutney and enjoy its  taste. Fried Namkeen Pitha is so very tasty that you can have them without any chutney...
Steamed Fara Recipe

To make Namkeen Pitha with vegetable stuffing :

Choose any of the vegetables from carrots, cauliflower, peas, cabbage, boiled potatoes and grate or finely chop them. Add spice to it and fry for 2-3 minutes the stuff it as the dal paste and make your desired shape of Namkeen Pitha.
