Stuffed Potato Recipe - Bharwan Aloo Recipe

Ingredients for Stuffed Potato
- Potatoes - 400 gms. (10 medium sized)
- Oil - 2 table spoon.
- Cumin seeds - 1/2 tea spoon.
- Greeen Chilli - 2 (chopped)
- Ginger - 2 inch long piece (chopped)
- Turmeric Powder - less than 1/4 tea spoon.
- Coriander Powder - 1 tea spoon.
- Garam Masala - 1/4 tea spoon.
- Amchoor Powder - 1/4 tea spoon.
- Cashews - 15 (cut into small pieces)
- Raisins - 15
- Salt - according to the taste.
- Coriander leaves - 1 table spoon (chopped)
Method - How to make Stuffed Potato
Peel and wash the potatoes. Scoop out the inner portion of the potatoes with the help of a knife or a peeler so that they can be stuffed with the masala. Keep the scooped out pulp of potatoes in a separate bowl. Now take an another bowl and keep the potatoes in the water.
Take a pan and heat 1 table spoon oil into it. Tamper the cumin seeds into the oil and then add coriander powder, turmeric powder, chopped green chilli, and chopped ginger. Stir the masala with the spoon and mix it well. Now put potato pulp, salt and garam masala into the pan and mix well. Cook the masala for 3-4 minutes. Withing 3-4 minutes the potato pulp will get properly cooked. Turn off the flame and put amchoor powder, cashews, and raisins in the masala and mix them well. The masala to stuff the potatoes is ready.
Take out the pottaoes from the water and put them on a plate. Make sure that water is not collected inside the potatoes. Strain away all the water. Now stuff the potatoes with the masala stuff prepared.
Heat 1 table spoon oil in a cooker and tamper 1/4 tea spoon cumin seeds in it. Put 1 chopped green chilli, chopped ginger, less than 1/4 tea spoon salt, and 1 pinch of turmeric powder into it. Cook the masala for 1 minute and pour 1 table spoon water into it. Now start putting the stuffed potatoes into the cooker and mix the masala well with the potatoes with the help of a spoon. Close the lid of the cooker and pressure it for up to 1 whistle.
Open the cooker and take out the recipe in a serving bowl. Your Stuffed Potatoes are ready. Garnish the recipe with coriander leaves and serve it hot with nan, chapatis, or paranthas.
