Urad Dal tadka Dhaba Style - Mah Dal Tadka

Urad dal tadka is mostly consumed in Northern India. This urad dal recipe prepared with freshly ground spices, asafoetida and red chilly tempering is a popular recipe served mostly in Northern India dhabas or eating joints.

Ingredients for Urad Dal Masala
- Urad dal - 1/2 cup (100 grams)
- Tomato – 1
- Green chilly – 1
- Ginger paste – ½ tsp
- Ginger – ½ inch piece (finely chopped)
- Green coriander – 2 to 3 tbsp (finely chopped)
- Curry leaves – 8 to 10
- Cumin seeds – ½ tsp
- Asafoetida – 1 pinch
- Cumin seeds – ½ tsp
- Turmeric powder – ½ tsp
- Coriander powder – 1 tsp
- Garam masala –less than ¼ tsp
- Red chilly powder – ¼ tsp
- Whole dry red chilies – 2
- Cinnamon stick – 1
- Brown cardamom – 1
- Cloves – 2
- Black pepper – 10
- Ghee – 2 to 3 tbsp
How to make Urad ki dal
Clean the urad dal and rinse thoroughly. Also, rinse the tomato-green chilly and grind to make a fine paste. Peel the brown cardamom and deseed it. Now grind the seeds along with black peppercorns and cloves, coarsely.
Add 1 to 2 tbsp ghee in pressure cooker and let it heat sufficiently. Now add cumin seeds. After the seeds crackle add asafetida, coarsely ground spices, turmeric powder, coriander powder and curry leaves. Saute the spices using a ladle. After this add tomato-green chilly paste, ginger paste and finely chopped ginger. Now sauté the masala until the ghee starts separating from it.
When the ghee starts separating from the masala, add urad dal and sauté it with the spices for a minute. Now add 2 cups of water, salt and mix well. Close the cooker with a lid and let it simmer until it whistles once. After this reduce the flame and let it simmer for 2 more minutes. Turn off the flame now.
When the steam escapes on its own, open the lid of pressure cooker. Now add garam masala and finely chopped green coriander and mix well. Dal is ready to serve. But to enhance its flavor, add another tempering into it.
For this, heat 2 tsp ghee in a small wok and add ¼ tsp cumin seeds and whole red chilly into it. Saute for a while and pour this tempering over the dal. Give a nice stir and garnish with some coriander sprigs. Super yummy, spicy and hot masala urad dal is ready. Serve steaming hot with chapatti, rice, naan or anything you like.
