Ingredients for Kheer
- Basmati rice - 70 grams (1/2 cup)
- Full cream milk - 1 kg
- Desi ghee - 1 tbsp (optional)
- Cashews - 1 tbsp (chopped)
- Raisins - 1 tbsp
- Lotus seeds - 1/2 cup (chopped)
- Green cardamom - 4 to 5 (peeled and ground)
- Sugar - 100 grams or 1/2 cup
How to make Kheer
We often make kheer by roasting rice in desi ghee or by soaking them in water. Kheer made with both methods tastes delicious. Make kheer with whatever method you like.
Take rice in a vessel and place it on flame for heating.
With method , wash the rice. Add ghee in a pan and allow it to heat sufficiently. Now add rice and roast for 5 to 7 minutes.
With second method, instead if roasting rice, wash them with water and soak for 1/2 hour.
After milk starts boiling, add roasted or soaked rice into it. Stir milk with a spoon and after kheer simmers, reduce the flame. Kheer prepared on low flame tastes more scrumptious and keep stirring kheer after every 2 to 3 minutes (kheer starts burning at the bottom). When rice softens, add cashews, raisins and louts seeds.
It takes 1 hour for making kheer. Now you can see that rice and dry fruits have turned soft and kheer has got thick in consistency. Add sugar in kheer and cook for 2 to 3 minutes. Kheer is ready, turn off the flame and add cardamom powder into it.
Take out kheer in a bowl. Serve piping hot and relish eating. You can even keep it in refrigerator to serve chilled. Chilled kheer taste more delicious.
