Once the water comes to boil, put the noodles in it then let it boil for 8-10 minutes. Boil noodles till they turn soft. Turn off the gas. Drain remaining water from the noodles then wash with cold water.
Heat oil/butter in a pan, put ginger, carrot, capsicum and cabbage in the pan. Stir the ingredients continuously for 2 minutes as they get cooked. Now add noodles, salt, soya sauce, vinegar, chilly sauce and black pepper. Mix all the contents in the pan as you stir them constantly for 2-3 minutes on a high flame.
Veg Chow mein is ready. Take out noodles in a bowl. Serve hot with chutney or tomato sauce and eat.
For noodles with onion : finely chop 1 onion, fry in hot oil till it turns light pink and now cook as you add the vegetables. Prepare Vegetable Chow mein by following the above method. Chop spring onions and sprinkle over the noodles.
