Sabzi prepared with potato, brinjals and slightly crispy radish leaves taste different yet delicious. So, when ever you buy radish, use its leaves for making sabzi with potato-brinjals or make moong dal bhujiya.

Ingredients for Potato Eggplant with Radish leaves Sabzi
- Radish leaves - 3 to 4 (soft leaves)
- Tomato - 2
- Brinjals - 250 grams
- Potato - 2 (250 grams)
- Mustard oil - 2 to 3 tbsp
- Green coriander - 3 to 4 tbsp (finely chopped)
- Ginger - 1 inch piece
- Cumin seeds - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Green chilly - 1 (finely chopped)
- Asafoetida - 1 pinch
- Garam masala - 1/4 tsp
- Coriander powder - 1 tsp
- Salt - 1 tsp or as per taste
- Red chilly powder - 1/4 tsp
How to make Potato Eggplant with Radish leaves Sabzi
Remove the stalk from the leaves and select the soft ones. Wash the leaves thoroughly twice or thrice with water. For making the sabzi, peel the potatoes, wash thoroughly and cut them in medium size chunks.
Heat some oil in a pan and add cumin seeds, asafoetida, turmeric powder, ginger powder, ginger paste, finely chopped green chilly and saute for a while. Also add coriander powder and diced potato chunks. Cover and cook the potatoes for 5 to 6 minutes.
Meanwhile, let's chop the brinjals and drench them in water. Also, finely chop the radish leaves.
Check the potatoes and when slightly cooked, add brinjals and radish leaves, followed by salt, red chilly powder and 1/4 cup of water. Mix well, cover and cook the sabzi for 5 minutes on low flame. Check later.
Stir the sabzi and cook for 4 more minutes. Keep stirring the sabzi at regular intervals so that it's not over cooked and spices mix evenly.
Finely chop the tomatoes and when the sabzi is cooked, mix them to the sabzi. Cover and cook for 2 to 3 more minutes. Sabzi is ready, add garam masala and some green coriander as well and take it out in a bowl.
Steaming hot and mouth drooling Potato-Brinjal with radish leaves is ready. Garnish with some green coriander and serve with chapatti, paranthas, rice and relish eating.
