Doda Burfi Recipe from Wheat Sprouts

Doda Barfi is a special sweet of Delhi and Haryana. It is made from sprouted wheat. It is very tasty to eat and you will love to eat it again and again. It is prepared in a very easy way. The ingredients to make it are present in your kitchen, as well as wheat will be easily available at any mill near you. So make this famous sweet and enjoy its sweetness.
Ingredients for Doda Barfi
Sprouted Wheat - 1 cup
Curd - ¼ cup
Full Cream Milk - 1 litre
Brown Sugar - ½ cup (90 grams)
Coconut - ½ cup, grated
Cashews - ¼ cup
Cardamom - ½ tsp
Nutmeg Powder - ¼ tsp
Milk - 1 tbsp
Cocoa Powder - 1 tsp
Desi Ghee - ¼ cup (60 grams)
For Glucose Syrup
Sugar - ¼ cup (55 grams)
Lemon Juice - 3-4 tsp
Salt - ½ pinch
Process of making Sprouted Wheat
Wash ½ cup of wheat thoroughly and soak it in water overnight. On the second day, spread a cotton cloth on a sieve and put this wheat on it. Then cover it well with a cloth and soak it by pouring water on it. After draining the water, keep a small bowl on a plate, then keep a sieve on it and keep it like this for 2 days. Remember, after a day, a little water has to be sprinkled on it, because the cloth should remain moist. Wheat will sprout after two days.
Process of making Glucose Syrup
Put 4 tbsp of sugar and 2 tbsp of water in a pot and cook on low-medium flame till the sugar dissolves. Keep stirring it for a while, after the sugar dissolves, add ½ pinch of salt and 2-3 lemon drops. Now cook it till one string comes. Check with a spoon, when the last drop falls, a string will come, then glucose syrup will be ready, take it out.
Process of making batter
Put the sprouted wheat in the mixer jar and grind it coarsely, stir it once with a spoon and then run the mixer again. If it seems too dry, then 1-2 tbsp of water or milk can be added. In a pan add the ground sprouted wheat and ¼ cup of curd and mix it well. Then add 1 litre full cream milk to it and cook it on low-medium flame while stirring it once in a while.
When it becomes thick, add ½ cup of brown sugar (you can also add jaggery or jaggery sugar instead) and mix it. Cook it while stirring it once in a while. When it thickens well, add ½ cup of grated coconut, ¼ cup of small chopped cashews, ½ tsp of coarsely ground cardamom and ¼ tsp of nutmeg powder and mix it well.
If its colour is not too brown, then mix 1 tbsp of milk and 1 tsp of cocoa powder in a bowl and put it in. Mix it and add glucose syrup to it and mix it well. Now add ¼ cup of ghee and cook it while stirring continuously till the consistency comes. When it is cooked, the batter for Doda Barfi will be ready.
Process of making Doda Burfi
Grease the tray with ghee and pour the batter on it. Now apply ghee on a spoon and make it uniform, remember doda barfi becomes thick. After doing the same, put some thinly sliced almonds and cashews on it and press lightly. Now keep it in the fridge for 2 hours. When the time is up, turn the tray on the gas for 10-15 seconds so that the pieces come out easily. Then cut it into your desired shape and serve it and enjoy its taste.
Suggestions
Take full care of stirring it while cooking, keep stirring it continuously when it becomes thick.
