Lobia and Potato Masala Recipe - Punjabi Lobia Recipe
Lobia is a light green colored thin phali or beans which are prepared along with potatoes. This sabzi is super tempting to eat and can be prepared instantly.

Ingredients for Punjabi Lobia subzi
- Lobia phalli - 250 grams
- Potatoes - 2 (250 grams)
- Oil - 2 to 3 tbsp
- Green coriander - 2 to 3 tbsp (finely chopped)
- Ginger - 1 tsp (paste)
- Green chilly - 2 finely chopped
- Asafoetida - 1 pinch
- Cumin seeds - 1/2 tsp
- Dry mango powder - 1/4 tsp
- Red chilly powder - 1/4 tsp
- Turmeric powder -1/4 tsp
- Coriander powder - 1 tsp
- Salt - 3/4 tsp or to taste
How to make Lobia and Potato Masala Recipe
Rinse the lobia phalli nicely and place them in sieve so that extra water drain outs. Now cut off both the ends of beans and chop them down in to 1/2 to 0.75 inch chunks.
Peel the potato and rinse them thoroughly with water. Then cut the potatoes into medium chunks.
Heat some oil in a wok. When the oil is hot, add cumin seeds, asafoetida to it. After sauteing the cumin seeds, add turmeric powder, coriander powder, green chilies and ginger paste to the wok and saute for a while.
Now to it add chopped lobia beans, potatoes, salt and red chilly powder. Saute the veggies for 2 minutes while stirring constantly. Then add 3 to 4 tbsp water, cover and let the sabzi simmer on low flame for 5 minutes. After this check, if the potatoes are cooked through and turned tender.
Cover the sabzi again and cook for 5 minutes. Check the sabzi. Cook the sabzi until potatoes get tender. It take 12 to 15 minutes for cooking this sabzi. Now to it add mango powder and green coriander. Mix everything really well.
Lobia aloo sabzi is now ready, transfer the sabzi to the bowl and garnish with some green coriander. Serve this lip smacking aloo lobia sabzi with chapatti, parantha or rice and relish eating.
