Sweet Guna Recipe for Gangaur

Guna is mostly prepared in Rajasthan, Agra and Mathura region. Basically, it is prepared for Gangaur fast but with its tantalizing taste, it can be prepared on any festival. This sweet have a longer shelf life. These can be prepared in both, namkeen and sweet flavor. Today we are making sweet guna.

Ingredients for Sweet Guna Recipe
- Refined flour - 2 cup (250 grams)
- Sugar - 1 cup (200 grams)
- Ghee - 1/4 cup (60 grams)
- Ghee - for frying Guna
How to make Sweet Guna
For making sweet Guna, take refined flour in a big bowl and add ghee into it. Mix well. Now add water little by little and knead a bit stiff and tight dough, same as required for making poori.
Cover the dough and keep it aside for 20 minutes to set. Dough will puff up and will double in its size. After 20 minutes, knead the dough again. Make two lumps from the dough. Take one lump, roll and place it over the rolling board. Now roll out the dough ball into a sheet with 1/4 cm thickness. Roll out the dough ball equally with 10 inch diameter.
Now make 1 or 0.45 inch wide strips. Now take one strip, roll it against your finger giving its a round shape of guna. If there is some extra dough left after one round, then remove it. Make another guna from this extra dough. Likewise prepare all gunas. Make gunas from the other dough ball as well. Roll these gunas and make peaks over it to give it a different design.
Preheat ghee in a wok. When ghee is medium hot, place a small dough ball into it and check whether it aptly roasted or not. If it floats on the surface, then the ghee for frying gunas is ready. Place the gunas in medium hot ghee and keep the flame medium-low. Fry gunas from all sides until they get golden brown in color. Take out the fried gunas in a plate with absorbent paper and likewise fry all gunas.
Make Sugar Syrup
Take sugar and 1/3 cup water in any vessel. Cook until sugar melts completely. Now check the syrup. For this take 1 to 2 drops in a plate, stick it between thumb and index finger and pull apart. It should be gooey and sticky. If there is formation of 1 to 2 threads in syrup, that means its ready. Turn off the flame.
Gunas have cooled, now dip them in sugar syrup. Gunas should be coated with syrup nicely. After 1 to 2 minutes, take them out in a separate plate. Likewise coat all gunas with sugar syrup. Mouth drooling sweet gunas are ready. Allow them to cool and then store them in an airtight container. These gunas can be consumed for up to 1 month.
Suggestion:
- Fry gunas on low-medium flame. It takes 10 to 12 minutes for frying gunas at one time.
- Coat Gunas with warm sugar syrup. If syrup cools while coating the Gunas then heat it again.
