Kalmi Vada Recipe
Crispy and delicious kalami vada are tasty to eat and also can be served very easily. If some guest are arriving at your place , after frying these vada's cut and keep them and once the guests arrives fry them all over again and serve hot kalmi vada to them.

Ingredients to make Kalmi Vada
- Channa dal- 1/2 cup
- Green coriander - 2-3 tbsp finely chopped
- Green chilies - 2 finely chopped
- Salt - 1/2 tsp (to taste)
- Red chili powder - 1/4 tsp
- Ginger - 1/2 inch piece (grated)
- Coriander powder - 1/2 tsp
- Heeng (asafoetida) - less then 1 pinch

How To Make Kalmi Vadas
Wash chaana dal, soak it for 5-6 hours or overnight. Take out the excess water. Grind the dal coarsely without adding water. If the dal is very much dry add 1-2 tbsp water.
Add salt, green chili, ginger, coriander powder, red chili powder, green coriander and heeng to the grinned dal and mix well. Put oil in the pan for heating.
To prepare vada cover a bowl with cotton cloth and hold it tightly. Wet the cloth with some water, place a lemon size quantity of mixture in round shape on the cloth and with the help of fingers spread it evenly in round shape.
With utter alertness hold the round vada and put it in the hot oil. Similarly put the second vada in oil. Cook the vada till it turns light brown,fry it 70% only. Prepare all the vada similarly.
Cut the fried vada's in length of 1/2 inch and now whenever you feel like eating vada or whenever your guests arrives, fry the sliced vada's until they become crispy. Kalmi vada is ready.
These tasty and crispy vada"s can be served with green coriander chutney (sauce) and tomato sauce.
