    Watermelon Rind Candy - Candied Watermelon Rind Recipe We often make a Curry or Jam of watermelon rind, but the candy made using watermelon rind is very tasty and refreshes us during the hot weather. We can add this candy in fruit cream, ice cream or kulfi. Ingredients for Watermelon Rind Candy Watermelon rind - 1.5 kg Sugar (Cheeni) - 1 cup or 200 grams Cardamom (Chhoti elaichi) - 4 (Crush to make a powder) Nutmeg powder (Jaiphal) - 1-2 pinch How to make Watermelon rind candy Peel off the rind from the watermelon. Remove the dark green cover. Peel off the watermelon rind and cut it into pieces of 1 inch each. Take as much water in a bowl so that the watermelon rind are soaked in it easily. Once the water starts to boil add the watermelon rind. Cover and let it boil for 5 minutes. Turn off the flame and remove the watermelon rind from the water. Add the boiled watermelon rind in a bowl. Put sugar on top of it. Cover and keep it aside for 2 hours. The sugar will dissolve in water and will form a syrup. Now cook the watermelon rind in the sugar syrup on low flame. Now add cardamom powder and nutmeg powder to it. Mix well. Cook the syrup till it has a thick consistency. Check the syrup. Pour 1-2 drops of syrup on a plate, once it cools down touch it with your finger and thumb. If a string is formed then it means that our syrup is ready. If no string is formed, then cook the syrup for some more time. Leave the candy in the syrup only. With the help of a spoon, keep mixing the syrup every now and then. Check the syrup after 2-3 days. If you feel that the syrup has a thin consistency then cook it for some more time. Watermelon rind candy is now ready. If you want to make the candy, then filter the syrup and keep the pieces of watermelon rind in the filtrate. In 8-10 hours it will get dry. Our watermelon rind candy will be ready. Suggestions : We have used cardamom powder and nutmeg powder for flavour, but you can add cinnamon, vanilla essence or anything as per your choice.
