Stuffed Bhindi Recipe

सूखी सब्ज़ियों में भरवां सब्ज़िया सभी को पसन्द आती हैं. भरवां सब्जियां 2 दिन तक रख कर भी खाई जा सकती हैं, यह जल्दी खराब नहीं होती. मेरे परिवार में भरवां भिन्डी (Stuffed Bhindi) बहुत पसन्द की जाती है. भरवा भिन्डी को हम कई तरह से बना सकते हैं, सादा मसाला बनाकर, मसाले में बेसन डाल कर, मसाले में पनीर या आलू मिला कर, प्याज लहसुन भून कर मसाला बनाकर भी भिन्डी में भर कर बनाते हैं, लेकिन आज हम मसाले में बेसन मिला कर भरवां भिन्डी (Stuffed Ladyfingers) बनायेंगे.

विधि - How to make Stuffed Bhindi

  • भिन्डी- 300 ग्राम ( मीडियम आकार की मुलायम भिन्डी )
  • बेसन - 1 टेबल स्पून (यदि आप चाहें)
  • तेल - 3 - 4 टेबल स्पून
  • सौंफ पाउडर- 2 छोटी चम्मच
  • धनियां पाउडर -2 छोटी चम्मच
  • लाल मिर्च पाउडर- 1/4 छोटी चम्मच
  • हल्दी पाउडर- आधा छोटी चम्मच
  • अमचूर पाउडर- आधा छोटी चम्मच
  • गरम मसाला- एक चौथाई छोटी चम्मच
  • अदरक- 1इंच लम्बा टुकड़ा ( कद्दूकस कर लें)
  • हींग -1 चुटकी
  • जीरा - एक चौथाई छोटी चम्मच
  • नमक- स्वादानुसार (3/4 छोटी चम्मच)

विधि - How to make Stuffed Bhindi

भिन्डियों को अच्छी तरह धो लीजिये. पानी हटाइये, भिन्डियों के दोनों तरफ के डन्ठल काट दीजिये और उन्है इस तरह काटिये कि भिन्डी एक ओर से जुड़ी रहें.

हींग और बेसन को छोड़कर, सारे मसाले प्लेट में निकाल कर मिला लीजिये. छोटी कढ़ाई में 1 टेबल स्पून तेल डाल कर गरम कीजिये, हींग और जीरा डालिये, जीरा तड़कने पर बेसन डाल कर भूनिये, सारे प्लेट में निकाले हुये मसाले भी इस मसाले में मिला लीजिये, 1 मिनिट भूनिये,गैस बन्द कर दीजिये, भिन्डी में भरने के लिये मसाला तैयार है.

इस मसाले को थोड़ा थोड़ा भिन्डियों में भरिये ( मसाला इस हिसाब से भरें कि सारी भिन्डियां भर जायें ).

कढ़ाई में 2 बड़े चम्मच तेल डाल कर गरम कीजिये.  तेल में मसाले भरी भिन्डी डालिये और धीरे धीरे 2-3 बार चमचे से चलाकर, 5 मिनिट ढककर मीडियम गैस फ्लेम पर पकाइये, ढक्कन खोलिये, भिन्डियों को पलटिये, 2-3 मिनिट और ढककर धीमी गैस पर पकाइये. भिन्डियों को खोलें और पलट कर 2 - 3 मिनिट बिना ढक्कन के ही तेज गैस फ्लेम पर पकाइये. भरवां भिन्डियां तैयार हैं.

भरवां भिन्डियों को प्याले में निकाल लीजिये, बेसन वाले मसाले की भरवां भिन्डी परांठे, नान या चपाती के साथ परोसिये और खाइये.

समय: 25 मिनिट, चार सदस्यों के लिये.

      Mam, maine try kiya but fry karte time besan bhindi se nikal gaya or jal gaya. निशा: अनिल, भिन्डी को भर कर थोड़ी देर रखी रहने दें, ताकि उसके अन्दर के नमी से मसाला गीला होकर भिन्डी से चिपक जाय, और गैस धीमी रखें मसाला नहीं जलेगा.

    hi Madam. Aapki sabhi receipes bahut achi h. Please tell me ki mein microwave mein cake kaise banau. Aapne oven mein banana bataya h. microwave mein kaun sa bartan use krna h cake banane ke liye.

    bhindi bnate samay kai bar wo pani chod deti hai aur las-las si ban jati h jo khane me achi nai lagti to iskeliye kya karna chaiye

    Hi.. Nisha ji, Aapke sarey receipe kafi clear hote aur easy hote hain but mujhe isme thori si confusion hai. Jaisa ke aapne bataya ke oil garm ker ke zeera tarakne tak garm karen aur phir usme besan aur phir sarey masale daal den. aur phir bhunene ke baad gas band ker den aur ye masaley bharne ko tayyar hain.. but its not clear ke ye masale dry honge ya isme paani bhi mix hoga? agar dry hoga to shayd taste nahi aayega aur agar pani mix kerna hai to wo kab mix karenge? plz isye clear karen!!!
