Puff Pastry Sheets Recipe
You need Puff Sheets to make Puff pastries, Puff Biscuits etc. Usually you do not find Puff Sheets for sale in the market in India. So you have to make them at home.
Preparing puff pastry sheets require a little effort, but a lot of patience. You'll have to take out the dough at regular intervals from the refrigerator, roll it out, and put it back. But if you do this once you can keep the sheets in the fridge for a long time and prepare tasty puff biscuits or pastries whenever you want.
Ingredients for Puff Pastry Sheets
- Maida ( all purpose flour) - 600 gms. (5 1/2 cup )
- Butter - 300 gms. (1 1/2 cup).
- Salt - 1 tea spoon.
- Lemon - 1
Method - How to make Puff Pastry Dough
Take out the flour in a vessel and sieve it. Keep aside about a hundred grams of the sieved flour, we'll knead the rest. To prepare the dough we'll need water that's half in volume of the flour. Add 1 tablespoon of ghee, lemon juice, and salt to the water and knead soft dough similar to the one prepared for chapatis. Cover the kneaded dough and keep aside for half an hour, then knead it once more to ready it for the pastries.
Musk the Butter and place it in the refrigerator for 5 minutes. Now take the dough and spread it over a table or kitchen top and roll it into square shape. Place the frozen Butter at the bottom of the dough and close it from the edges.
When you fold the sides just make sure that all the pastry sheet is packed properly and there's no room for the butter to seep out. After packing sprinkle some dry flour on the pastry and roll it out into a rectangular shape with a light hand. You have to be light-handed to ensure that the butter doesn't seep out. Fold the pastry again from all sides. Keep this in the fridge for 15 minutes so that the butter congeals between the pastry sheets.
Take out the dough sheet from the refrigerator after 15 minutes and roll it again and fold it again from the edges. Place it in the refrigerator for another 15 minutes. This is your second step.
Repeat the second step 2 more times. Take out the dough, roll it, fold it, and freeze it. So this has to be done for a total of 4 times. Your pastry sheet will be ready for baking once you've done this.
Roll the Puff Pastry Dough into 1/3 inch thick disc and cut it into desired shape. You can prepare Pastries from this Puff Sheet right now or can store it in the refrigerator to use it later. You can also keep a polysheet between two pieces so they doesn't get stick to each other. When you wish to make Puff pastries just take out the Puff Sheet from the refrigerator 4-5 hours before baking the Pastry. If you do not have much time in hand , then you can also frost the Puff in the microwave and use it instantly.
